100% Pinot Gris from vines free from chemicals and with soil left unploughed to safeguard its microbial life, adhering to Masanobu Fukuoka’s “natural farming” principles. Despite the hot, humid climate, the parcel in Nirasaki, facing Mount Fuji, receives no treatments, requiring Eishi’s full dedication. Hand-harvested, naturally vinified with zero sulfur, and crafted with ceremonial precision: gentle maceration in stainless steel, followed by long barrel aging. Only 305 bottles produced.
Eishi Okamoto
Eishi Okamoto, a former archaeologist has been cultivating since 1999 his intimate 3-hectare estate, Beau Paysage, in Japan’s upper Yamanashi valley.
