A 100% Chardonnay cuvée, from a vineyard parcel that had once been abandoned, planted in 1919 by Jean-François’ grandfather, on the Vercia lieu-dit. The soil is composed of red and white marl with a limestone subsoil. The grapes are harvested by hand and vinified naturally. After direct pressing, this non-oxidative cuvée (made using ouillage or ‘topping up’ of the barrels) was aged in demi-muid barrels for four years on the lees in a humid cellar. No added sulphur, and no fining or filtration.
