Produced only in magnums, this is an ultra-confidential cuvée, made from an old variety of Chardonnay called Melon à Queue Rouge. The vines are cultivated on marls. The yield is only around 7 hl/ha! As for vinification, it’s the all-natural methods you expect from Fanfan: fermentation on lees with indigenous yeasts, four years of maturation on the lees, in demi-muids barrels and casks that have seen several wines. The wine is neither filtered nor fined, zero added sulfites.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
