A blend of Pinot Noir, Trousseau, and Poulsard from organically farmed vines in the Côtes du Jura, near Maylis' cellar. Crafted from carefully sourced grapes. Hand-harvested and naturally vinified: two and a half weeks of whole-cluster semi-carbonic maceration, infused with no punch-downs or pump-overs. Aged for one year in wooden foudres. Bottled unfined, unfiltered, zero added sulfur.
