100% Savagnin from organically farmed vines in the village of L'Étoile, sourced from top-quality growers. Hand-harvested and naturally vinified: direct pressing, light settling, then fermentation and aging in 500L demi-muids. Barrels were regularly topped up for two years before stopping it for allowing a light oxidative veil to develop. A total of six years of aging. Bottled in July 2024, unfined, unfiltered, zero added sulfur.
