100% Savagnin from old vines rooted in grey marl and limestone scree soils on the Arbois terroir, Jura. Hand-harvested. Naturally vinified at Domaine Ganevat: direct pressing, indigenous yeasts, over three years of aging on lees in neutral demi-muids, topped up regularly (not oxidative). Bottled at the domaine without fining, filtration, or added sulfites.

Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
