100% Savagnin from young vines planted by Tony himself, and farmed biodynamically, as always with the Bornards. The grapes are harvested by hand on the 11th of September 2020, with tightly controlled yields. Vinified naturally, without any additives: two weeks of maceration on the skins, gentle pressing, maturation in barrels that have seen several wines. No fining, no filtering, and no added sulphites. Favor standing storage before serving.

Tony Bornard
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013. He then took over the family estate from his father in 2017, merging it together with the estate he’d personally...
