100% Savagnin, from vines farmed biodynamically and planted on marl soils in the Chassagnes area of Pupillin. Manual harvest. The vinification is gentle and respectful, with direct pressing, long maturation in barrels that have seen several wines. Neither fined nor filtered, bottled at the estate without any added sulphur.
Tony Bornard
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
