100% Savagnin from vines grown biodynamically and harvested by hand, at maturity. Vinification: nine months of maceration, gentle pressing, five months of aging in a dolium, a terracotta Italian amphora, here in a 1000-liter version. Bottled without fining or filtration, with no added sulfites. Why Mammoth? Because these are cuvées that, like the Mammoths in their day, have existed since 2016 but will disappear for good after the 2020 vintage.

Tony Bornard
Tony Bornard is the son of the famous Jura figurehead Philippe Bornard , today retired. They are neighbours of the famous Pierre Overnoy, andhey reside in the oldest building in the village of Pupillin. Tony struck out on his own to quietly create his estate as well in 2013.
