100% Poulsard from organically farmed vines, planted on limestone soils with layers of white, red, and blue marl, typical of northern Jura. This is a cuvée from grapes are bought from the Fruitière Vinicole d'Arbois, France’s oldest wine cooperative. Hand-harvested and naturally vinified: a three-day cold pre-fermentation maceration, gentle pressing, followed by fermentation and 8 months aging in stainless steel tanks. Bottled with minimal sulfur (35 mg/l total SO2).
