100% Carignan from organically farmed vines grown in goblets on the Les Bialasses and Les Euillastres parcels, featuring clay and gravel soils. Two shallow plowings per year and hand-harvested in crates. Vinification includes whole cluster maceration for about a week, gentle pressing, and just over a year of aging in old barrels. Bottled after the 2021 harvest, unfined, unfiltered, with no added sulfites.
