Désobéissance - 2022 - Benoit Guillot et Erika Mazer

Les Gragnotes

A blend of 90% Carignan and 10% Syrah from organically farmed vines planted on clay-limestone soils along the river in Paziols. Mostly centenary vines, with a younger 15-year-old plot. Hand-harvested early in the morning in small crates. The two grape varieties are vinified separately, with the whole clusters that were trodden by foot and macerated for five days. Aged for three months in 6 to 12-year-old barrels, followed by blending and four months in tanks. Bottled in May 2023 with just a micro-dose of sulfur.
