Blended cuvée: 50% Carignan, 30% Grenache and 20% Cinsault, from 40-to-70-year-old vines, planted on schist soils and grown biodynamically, and no chemicals have touched his vines in 30 years. Didier’s green capital is entirely managed by his cows, the winegrower’s other great passion...The grapes are harvested by hand in small crates, low yields. Natural vinification: maceration for 3 to 4 weeks, pressing in an old vertical wooden press, aging for 2 years in barrels, with 10% new oak. Micro-dose of sulphur at bottling.
