A blended cuvée: 50% Carignan, 40% Syrah, and 10% Grenache, from 30- to 60-year-old vines, grown on schist soils. Didier’s green capital is entirely managed by his cows, the winegrower’s other great passion, and chemicals haven’t touched his vines for more than 30 years. The estate is certified organic and biodynamic. Manual harvest in small crates, controlled yields. Natural vinification: maceration for 3 to 4 weeks, pressing in an old vertical press, maturation for 2 years in barrels, with 10% new oak. Only a microdose of sulphur at bottling.
