Blend of 40% Carignan, 10% Syrah, and 50% Mourvèdre, Grenache and Cinsault, from 25-30 year-old vines planted on limestone marls soils. Harvested by hand, yields of 30 hl/ha. Vinification without destemming, so the whole clusters are macerated for two weeks in open vats, without extraction, gentle pressing, the juices are moved by gravity into barrels. 18 months of aging, including 12 months on fine lees in 12 hl, 31 hl and demi-muid barrels. No fining, very light filtration, just a micro-dose of sulfur.
