100% Cinsault. From 40-60-year-old vines grown on north-facing slopes of stony clays, at 200 meters in the small town of Paziols. The estate is certified organic. The soil is lightly tilled twice a year, and grapes are harvested by hand with small crates. Vinification: maceration of whole bunches for 6 days. Maturation for 7 months in stainless steel tanks. Bottled on the 2nd of April 2024, without fining or filtration, with not even 1 g/hl of sulphur.
