A blend of Côt, Cabernet Franc and Gamay from 15- to 45-year-old vines, cultivated biodynamically (certified by Biodyvin) and planted on soils of red clay and flint, over limestone bedrock. The grapes were harvested by hand on the 19th and 29th of September and 5th of October 2023 for the Cabernet, and sorted on tables in the vineyard and in the cellar. Vinification: each grape variety is separately macerated and fermented in concrete vats. Blended and matured in concrete vats for 4 months. Light diatomaceous earth filtration before bottling.
Damien Délécheneau
Damien and Coralie Délécheneau met as classmates in Bordeaux, while both studying for their oenology diplomas, and haven’t left each other since. After each separately gaining experience (in the Beaujolais trade body, and in California for Madame, and training in Irancy, in Chablis at Domaine Laroche, in Saint Estèphe, and in Napa Valley for Monsieur) they finally returned to Amboise in 2002...
