100% Cabernet Franc from 70-year-old vines, in conversion to organic farming, planted on two hectares in total, facing South-West in Saint-Aignan-sur-Cher, clay-limestone soils. Manual harvest at good maturity. Vinification: total destemming, 22 days of vatting with a single pumping over and very small punching down, soft pressing. 18 months of aging in 228-liter barrels, without new oak, these are ex-Bordeaux barrels of Château Cheval Blanc and Château Mangot. Bottled without filtration, sensible use of sulfites.
Valentin Desloges
Valentin Desloges, child of the 1993 vintage, took the right decision by continuing the family line of winegrowers and founding Les Quatre Piliers estate. After high-school in Amboise and a BTS viti-oeno in Bordeaux, Valentin participated in the vinification of Château Mangot, then left in 2015 for 6 months in New Zealand, where he deepened his comprehension of Sauvignon.
