100% Chenin from 60-year-old organic vines planted on the terroir of Montlouis-sur-Loire, on clay-siliceous soil. Manual harvest in small crates and low yields of 20 hl/ha. Vinification: 3/4 of the cuvée comes from direct pressing, 1/4 from the maceration of Chenin. Blending in Spring, with 40 grams of residual sugars. Bottled at the Estate in March 2021.
