Cabernet Franc from 45- to 55-year-old biodynamic vines, planted on a clay-loam terroir. Harvesting is done by hand using crates, with careful sorting, and yields of around 40 hl/ha. Vinification: 100% destemmed grapes macerate for about 30 days, without excessive extraction, then are gently pressed in a pneumatic press. Matured 12 months on fine lees in 228-litre Burgundy barrels that have seen 5 to 7 wines, then 6 months in stainless steel vats. Bottled at the estate according to the biodynamic calendar, without fining or filtration.
