100% Chenin from vines permacultured for over 10 years by Domaine des Quarres, Rablay-sur-Layon, planted in 1974 on a south-facing slope with schist soils. Hand-harvested on October 4 for optimum ripeness, with small, highly concentrated bunches. Vinification at the Languidic winery in Brittany: direct pressing, racking at the end of fermentation, aged on fine lees for 7 months in stainless steel tanks. Bottled on April 9th, 2024, without fining or filtration.
