100% Chenin from four-year-old vines grown organically, planted on schist soils. The parcel is classified in the Coteaux-de-l'Aubance appellation, but Olivier has not submitted his wines to the appellation committees, so they are automatically classified as Vin de France. Manual harvest and natural vinification: direct pressing, aging in fiberglass vats for almost 10 months. Bottled in August 2023 without fining or filtration, just a micro-dose of sulfur before bottling (1.5 gr/hl).
