A concentrated nose of cranberry, forest floor, pepper and subtle vegetal notes. The palate is pulpy, sapid, and mouthwatering, with great freshness and, as always, tremendous precision. The fine acidity promises superb ageing potential.

100% Cabernet Franc, from 60-year-old vines, grown biodynamically (the estate is certified organic by Ecocert and biodynamic by Biodyvin) and planted on a Jurassic-era plateau made up of siliceous gravel mixed with slightly clayey earth. Free of any limestone, the soil permits for the growth of very deep roots. The climate allows for slow, gradual ripening. Manual harvest and low yields, of around 20 hl/ha. Vinification is meticulous, 10 days of maceration with control of the temperatures, 14 months of aging in egg-shaped vats, on lees.
Adrien et Guillaume Pire
Guillaume Pire was born in Belgium, he grew up in Madagascar. In 1998, the Pire family bought the Château de Fosse-Sèche. After his studies in Switzerland, including time working at the pioneering Rouvinez estate, Guillaume took over the family estate with his brother Adrien.
