100% Pinot Gris, fruit of organic and biodynamic farming, planted on a granitic terroir. Farming: ploughing, natural grass cover crops, disbudding, leaf thinning as well as harvesting by hand are all practiced. Vinification: direct pressing, gentle settling, low temperature fermentation and maturation for 11 months in 500-litre barrels and in casks that have seen several wines.
