100% Pinot Noir from 50-year-old vines pruned according to the Guyot poussard method, organically and biodynamically farmed, planted on plateaus and hillside slopes with marl soils. Hand-harvested in 25 kg crates, sorted at the winery on a sorting table, with yields around 35 hl/ha. Natural vinification: total destemming, 8-day cold pre-fermentation maceration, gentle pump-overs, three weeks of maceration, soft pressing, fermentations, and short aging in terracotta amphorae. Bottled unfiltered, with zero added sulfur.
Paul Fouassier
Paul Fouassier, who earned his viticulture and oenology degree in 1998, worked in several leading Bordeaux châteaux (Pavie and Angelus among others) before returning to his large family estate in 2001. The estate holds 60 hectares, 50 ha of Sauvignon and 10 ha of Pinot, which he manages with his cousin Benoît. The duo represents the 10th generation, drawing the best from the rigour of Benoît...
