100% Cabernet Franc from 20-year-old vines, grown organically and planted in the Bourgueil appellation, 60% on grit soils and 40% on clays. Manual harvest. Vinification: total destemming, sorting of the berries on the sorting table, pre-fermentation, about 8 days of maceration with pumping over, pressing, aging in vats on fine lees until Spring 2024. Bottled at the Estate without fining or filtration, sensible use of sulfites.
