100% Cabernet Franc from vines grown biodynamically and planted in the Saint Nicolas de Bourgueil sector, on plots with sandy-gravelly soils. Manual harvesting, manual destemming directly on the plot, the berries are then transferels into barrels for 50 days of maceration during which the barrels are turned over on themselves for a gentle infusion of the grape pomace. Pressing, a few months of aging in egg-shaped concrete vats before bottling. Not fined, not filtered, without added sulfites.
