L'insaisissable - 2023 - Olivier Le Beau
Le Beau Domaine
Not quite a red, definitely not a white... more of a tinted white! A unique juice with a highly expressive nose of white flowers, vineyard peach, and raspberry. On the palate: fresh, vibrant energy with a zesty finish. A rare cuvée to share among enthusiasts.

Third vintage for this blend of white and red grapes: predominantly Chenin and Baco, with a touch of Cabernet Franc. The vines are organically farmed and harvested by hand. Natural winemaking: direct pressing of the two white varieties, with the juice passed over the Cabernet Franc skins for a slight tint. Quick alcoholic fermentation, aging in stainless steel tanks, bottled in June 2024 without fining or filtration, no added sulfur. Ultra-limited production: only 272 bottles.
