80% Sauvignon and 20% Chardonnay cuvée, 40 year-old vines, organically grown and planted on clay-siliceous soils. Manual harvest, sorting of the grapes in the vineyard and ultra-low yield: 10 hl/ha. Vinification: direct pressing, low temperature fermentation, indigenous yeasts, no chaptalization and no sulfur. Maturation on fine lees in barrels and casks that have seen several wines, 40% of the wine is aged in amphorae, bottled without fining or filtration, just a micro-dose of sulfur. A wine that is only produced in the best vintages.
