100% Cabernet Franc from 60-year-old organic vines planted on sands and chalk. Manual harvesting, total destemming, sorting of the berries on a sorting table, cold pre-fermentation maceration, approximately three weeks of maceration with pump-overs and punch-downs, two years of aging in casks and demi-muids barrels that have seen two to three wines. Bottled at the Estate without fining or filtration. Maturation in the bottle at Bel Air’s, in old caves carved into the tuff, the ideal environment for the wines.
