A sparkling white wine, just slightly off-dry with 16 grams of residual sugar per liter, it’s the perfect bottle to enjoy at the end of a meal with a fruit tart. Notes of orchard fruits, lemon zest, honey, almond, and a hint of brioche.

Chenin from biodynamically farmed vines aged 10 to 30 years, planted on clay and flint soils over tuffeau, in the Jasnières and Coteaux du Loir appellations. Hand-harvested. Natural winemaking: direct pressing, aging in barrels on fine lees, and blending of several vintages—70% from 2021 with 30% reserve wines, Solera style. Bottled in November 2022 with the addition of a liqueur de tirage for secondary fermentation, followed by a year of aging on laths before disgorgement in November 2023. A cuvée without dosage, with a low dose of sulfur.
