70% Gamay and 30% Grolleau, from vines grown organically, planted on schist soils in Oudon, and harvested by hand. Different types of vinification: one vat in whole bunches, one vat of destemmed grapes, one vat of blended berries and bunches. Soft pressing, blending of the three vats after malolactic fermentation, aging in fiber vats. Bottled mid-March 2023 without fining or filtration, just a micro-dose of sulfur 10 days before bottling.

In 2015, Philippe Chevarin embarked on a second career: after having worked as a musician and sound engineer alongside such stars as Dominique A. and Vanessa Paradis, he found himself leaving it all to pursue a divine idyll in the world of wine! The revelation came from an encounter with the great winemaker Thierry Puzelat – or more specifically with a bottle of Puzelat’s Le Buisson...
