100% Melon de Bourgogne from 30-year-old vines grown organically, planted on clay soils over Gneiss subsoil. Plot of 75 ares in Coursay, small town of of Monnières. Harvested by hand and vinified naturally: gentle pressing, fermentation and ageing on lees for 8 months. Bottled on the estate without fining or filtration, only 14 mg/l total SO2.
Victor Cossy
Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3.22-hectare vineyard in Maisdon-sur-Sèvre, Muscadet.
