Old vines of Gamay Saint-Romain, farmed with organic and biodynamic methods, on a terroir of clay and granite soils. Ploughing, natural grass cover crops, disbudding, leaf thinning as well as harvesting by hand are all practiced at this estate, located at the foot of the Massif Central. Vinification: de-stemming for 2/3 of the harvest, maceration for 15 days, some punching down of the cap, and maturation in cement vats for almost a year.
