Blend of 80% Gamay and 20% Pineau d'Aunis from 20 to 40-year-old vines grown biodynamically and planted on flint clay soils on the Domaine de Bellivière, this is a blend of 9 plots (not from négoce contrary to what the label could suggest). Manual harvest in small crates. Vinification: total destemming, alcoholic fermentation in vats with punching down, indigenous yeasts, aging in vats on fine lees for 9 months. Bottled in June 2024 after a slight dose of sulfites.
