100% Sauvignon, from 50-year-old vines, facing South-West on a superb terroir of red clay and flint stone in Amboise. The vines are certified organic by ECOCERT and biodynamic by BIODYVIN. The grapes were harvested by hand, with a sorting table set up in the vineyard, and again in the cellar! Vinification: a delicate, long pressing of grapes with indigenous yeasts, the juice are then placed in barrels that have seen several wines, they are often topped up but no stirring of the lees. Matured until spring on its fine lees.
Damien Délécheneau
Damien and Coralie Délécheneau met as classmates in Bordeaux, while both studying for their oenology diplomas, and haven’t left each other since. After each separately gaining experience (in the Beaujolais trade body, and in California for Madame, and training in Irancy, in Chablis at Domaine Laroche, in Saint Estèphe, and in Napa Valley for Monsieur) they finally returned to Amboise in 2002...
