A blend of 45% Gamay, 35% Pinot Noir and 20% Pineau d'Aunis make the composition of the cuvée for this vintage. The vines grown biodynamically and planted on flinty clay soils. The grapes are harvested by hand, with low yields after this hot vintage and heat waves. The three grape varieties are vinified together in a non-interventionist way: three weeks of maceration of the whole clusters, gentle pressing, 36 months of aging before bottling at the estate in November 2023, without fining, filtration or any added sulfites.

Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
