100% Pineau d'Aunis, from vines aged between 10 and 50 years old, cultivated biodynamically and planted on 14 plots spread over the communes of Lhomme, Chahaignes and Marçon, for a total of 3.7 hectares. Harvesting is done by hand with crates. Alcoholic fermentation is done in vats with punching down of the cap, followed by natural malolactic fermentation in barrels and 12 months of maturation on the fine lees in casks and egg-shaped concrete vats. Bottled at the estate with a very light dose of sulphites in November 2023.

Clément Nicolas and his wife Laure-Anne took over the reins of Domaine de Bellivière in a smooth transition in 2021, after Clément had joined his parents, Eric and Christine Nicolas, at the estate in 2015.
