100% Sauvignon, made from old vines – more than 40 years old – pruned with the single Guyot and Cordon de Royat methods, cultivated biodynamically, and planted on a south-facing slope. Soil: 70% flinty clay and 30% limestone. Vinification: direct pressing, followed by fermentation in French oak barrels that have seen several wines, and 10 months of maturation on the fine lees. Blending of the barrels then one more year of maturation on the lees. Neither fined nor filtered, light dose of suplhites.
Paul Fouassier
Paul Fouassier, who earned his viticulture and oenology degree in 1998, worked in several leading Bordeaux châteaux (Pavie and Angelus among others) before returning to his large family estate in 2001. The estate holds 60 hectares, 50 ha of Sauvignon and 10 ha of Pinot, which he manages with his cousin Benoît. The duo represents the 10th generation, drawing the best from the rigour of Benoît...
