100% Pinot Noir cuvée from 35 to 50-year-old vines grown biodynamically, planted on different plots, plateau and hillsides, soils with 90% limestone and 10% clayey formation with flint. Vinification: destemming, 8 days of cold pre-fermentation maceration, then three weeks of vatting, a few punch-downs, soft pressing, one year of aging in barrels that have seen several wines. Just a micro-dose of sulfur at bottling, for a total SO2 of 15 mg/liter.
Paul Fouassier
Paul Fouassier, who earned his viticulture and oenology degree in 1998, worked in several leading Bordeaux châteaux (Pavie and Angelus among others) before returning to his large family estate in 2001. The estate holds 60 hectares, 50 ha of Sauvignon and 10 ha of Pinot, which he manages with his cousin Benoît. The duo represents the 10th generation, drawing the best from the rigour of Benoît...
