Sole - 2023 - Fred Niger
Domaine de l'Ecu
A powerful, complex nose, with notes of pear, exotic fruits, jasmine and a hint of blood orange. The palate is supple, ample, round and sapid, with a long, saline finish scintillating with lovely bitter and green almond notes.

100% Chenin from vines cultivated biodynamically and planted on a two-hectare plot with an orthogneiss subsoil, facing southeast. Harvesting is done entirely by hand, the grapes are received at the winery by gravity, with zero pumps used, followed by direct pressing in a pneumatic press, without settling. Matured in concrete vats, and bottled at the estate without fining or filtration, and just a microdose of sulphur.

Fred Niger
Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet....
