100% Melon de Bourgogne from 60-year-old vines grown organically, planted at La Bigotière in the small town of Maisdon-sur-Sèvre, on sandy-loam soils over Gabbro. Harvested by hand with small crates, gentle pressing, fermented and aged on lees for 20 months (hence the name of the cuvée!) in vats. Bottled on the estate without fining or filtration, just a micro-dose of sulfur at bottling.

Victor Cossy, child of the 1981 vintage, is the man behind Fermenterre, a small 3.22-hectare vineyard in Maisdon-sur-Sèvre, Muscadet.
