100% Côt from 120-year-old vines, cultivated biodynamically (certified by Biodyvin) and planted on red clay and flint soils. The grapes are harvested by hand, with controlled yields, sorting in the vineyard and in the cellar. Vinification: the grapes are destemmed, followed by 15 days of maceration in concrete vats. Soft pressing, 30 months of aging in amphorae. Unfined, unfiltered, lightly sulphured.
Damien Délécheneau
Damien and Coralie Délécheneau met as classmates in Bordeaux, while both studying for their oenology diplomas, and haven’t left each other since. After each separately gaining experience (in the Beaujolais trade body, and in California for Madame, and training in Irancy, in Chablis at Domaine Laroche, in Saint Estèphe, and in Napa Valley for Monsieur) they finally returned to Amboise in 2002...
