A blend of Grenache Noir, Cinsault, and Mourvèdre from biodynamically farmed vines, hand-harvested at slight overripeness. Grenache and Cinsault are first stored in refrigerated containers until the Mourvèdre ripens, then all three grapes are destemmed and co-fermented. Gentle maceration, pressed around All Saints’ Day, and aged 12 months in old barrels. Bottled at the Domaine, unfined, unfiltered, with no added sulfites.
