Half Carignan vinified with carbonic maceration from Romain, and half crushed and destemmed Cinsault with traditional maceration from Julien Daumas du Clos des Serènes, a winemaker friend (and winery neighbour!) who shares the same values. Separate fermentations for the two grape varieties, maturation in vats for the Carignan and in 600-litre muid barrels that have seen several wines for the Cinsault. Blended in March, a month and a half before bottling. Neither fined nor filtered, and just a microdose of sulphur.
