A blend of Clairette, Bourboulenc, Roussanne, Marsanne, Viognier and Grenache Blanc made from 20- to 40-year-old vines farmed organically and planted mainly on sandy soil. The grapes are harvested by hand, with yields around 20 hl/ha. Natural vinification: 12 hours of cold pre-fermentation maceration, followed by a long pressing of 5/7 hours, and one month of fermentation in concrete tanks. Matured 15 months in concrete vats (and in 12-hl muid barrels for the Clairette and Bourboulenc). Neither fined nor filtered, and just a microdose of sulphur.
