The name of the cuvée (which translates as “Head North!”) is a nod to Sylvain's northern roots in Belgium, and his desire to produce a cuvée that is "more northern than southern"! An elegant nose with notes of lily of the valley, pear, and minerals. The palate is full-bodied and rounded.

100% Clairette from vines farmed biodynamically and planted in 1994 on a 60-ares plot of soils with large pebbles in the commune of Bellegarde, in the Gard. The grapes are harvested by hand using 15 kg crates. Vinification: direct pressing, alcoholic fermentation in vats with indigenous yeasts, then maturation on the lees in 228-litre barrels that have seen around 10 wines, with malolactic fermentation, and a light filtration before bottling during Spring 2023. No fining, and just a microdose of sulphur.
