Costancia - 2021 - Thomas Jullien
La Ferme Saint Martin
A nose with notes of red fruits, clove, laurel, and touch of resin... Palate: a fine and elegant attack, followed by tension and harmony. This is smooth drinking juice, with fine tannins and a long finish. Yet another success from Ferme Saint Martin!

A blend of 50% Grenache and 50% Syrah, from vines aged 25 to 40 years old, farmed organically and planted in the Vaucluse. Soils of marl and limestone scree at an altitude of 500 metres. The grapes are handpicked, with yields of 30 to 32 hl/hectare. Vinification: the grapes are 100% destemmed, followed by 28 days of maceration, and 9 to 12 months of maturation in casks, all in the ruins of the old Saint Martin chapel, where the name “Costancia” is engraved on an ancient stone wall. Bottled without fining or filtration, and zero added sulphur.
