A 100% Gamay cuvée from a 0.5-hectare parcel farmed biodynamically on granite soil. The grapes are harvested by hand when fully ripe. Vinification: whole grape bunches and de-stemmed grapes are added to the vat in layers. Jean calls it "the sandwich effect"! One week of maceration follows, then gentle pressing, and a short maturation in stainless steel tanks. Bottled in the spring with a just a microdose of sulphur. No fining, and no filtration.
