A sublime wine that reveals its full range of aromas after 2 hours of decanting, opening with wild, animal notes such as leather, cigar box and garrigue, followed by fruit notes like plum, blueberry and black cherry. The palate is rich and aromatic, powerful yet silky, with fine length.

Carignan from old vines of more than 60 years, cultivated biodynamically and planted over two plots with Cretaceous-period clay-limestone soils that are peppered with fossilised Gryphaea – an extinct genus of oyster which lends its name to this cuvée. The grapes are de-stemmed, followed by gentle pressing, and one year of maturation, with 2/3 in barrels that have seen several wines and 1/3 in vats, after which the wine is finished by three additional months in vats. Bottled without fining or filtration, and just a microdose of sulphur.
